Rice and Raisins

This is an old, but easy formula with origins in the Mid-west U.S. Measurements are not needed. Precook the amount of rice you plan on serving. After the rice is cooked, add butter, cinnamon and sugar and raisins. If you like, you can plump the raisins in hot water, before adding to rice.

Apple Slaw

For a medium size head of cabbage, peel and chop three to four apples. Mix about one tablespoon of lemon juice with sufficient cold water to cover the chopped apples. Slice your cabbage and place in a large bowl.

Put two cups of water, one-half cup of cider vinegar, one-quarter to one-half cup of sugar and dash of cinnamon in a saucepan. Bring to a boil and let simmer until sugar has dissolved.

Mix two tablespoons of cornstarch with one-quarter cup of cold water and add to blend in saucepan. Make sure to stir the blend while adding the cornstarch. This will prevent lumps from forming.

When blend has thickened, take off from heat. Drain apples and add to cabbage. Pour blend over the cabbage and apples and toss together.

Cooked Sweet Potatoes with Cinnamon and Cream

Boil about six whole, small sweet potatoes or yams in water until tender. Meanwhile, get ready a syrup with the following: four cups of water, one cup of granulated sugar, dash of cinnamon and cloves. Bring to boil and simmer until syrups is reduced by half. Peel sweet potatoes and arrange in a deep dish. Pour syrup over the potatoes. Next, pour about one-half cup of warm cream or half and half over the mixture.
